@lactose intolerance, that's really just your body reverting back to normal. To be able to digest lactose, your body needs the enzymn lactase. This is made on it's own during the first few months of infancy. However, humans weren't intended to consume dairy based products after that, so the production of lactase is supposed to stop after those first few months. If you keep consuming dairy based products however, that will normally keep stimulating lactase production. If you at any point stop consuming enough lactose for a period of time though, the lactase production can halt and it can't be started up again.

If there's a raise in lactose intolerance among the population, that most likely has to do with a change in eating habits. Popularity of coffee and sodas probably has something to with it.
