I have an idea,
making the lower levels out of nether brick and cobble, then slowly turning into stone brick(Maybe cobble?) the higher we get, ending with stone bricks and snow.

Our plan was to make the first 10 levels above ground out of netherbrick, then continue with stone brick to level 100 and cloud from there on up

and on the subject of the actual mazes:

i won't be a complete stickler that slaves over the meticulous and pinpoint construction of each one.

this is a free area.

make em random.
make em hard.

if you can remember the route through it without looking at the top, it's probably too easy, and you need to make it harder.

traps too.

that's a free area

There needs to be an entire floor with nothing but automatic doors and stone cubicles. Goal would be to find the one cubicle with a ladder going to the next floor.

Ok guys, we can't have most of the maze pitch black because that's beyond unfair. I'm putting redstone torches around the maze to provide some light but not enough to see everything
