They weren't "deleted".

The lost episodes are lost because it was normal at the time to wipe and reuse film, since it was expensive and the idea of home video hadn't caught on.

Still, most of the lost episodes exist in audio form, sometimes even with a slideshow. I watched the First Doctor story Marco Polo and it was just that - audio and a slideshow.
