A subterranean sounds interesting. Building and farming underground would be a pain though. Farming trees underground is sooooo hard.

That's part of the idea. It forces you to think a bit more in the earlygame, since it's based partially in the pre-beta1.8 404 challenge.
You get just enough resources to give yourself a struggling start and have to work for the rest.

I'd probably put a tree of each wood type in the spawn area (which would be a dome in the middle of as many caves as possible, only the spawnhaus would be lit) as well as /give myself mob spawning eggs to be used at my discretion. Probably no more than two of each mob, one chicken.

No tall grass, bonemeal can be used to grow it.
