More of a Johnny, myself. This was fully cemented with my Bureaucracy deck, which is all about pillow forts, permits, and finally a filibuster.

I hear a lot of people separate their mythics and such, which I already do with my foils and Unhinged, but I've never been super concerned with rarity. Any arguments that I should be?

I don't have a plethora of cards, so right now I just have a trade binder that contains all my rares/mythics/popular uncommons and everything else is organized into boxes based on general type (land box, token box, creatures). I do have a friend that has a bunch of cards with a binder organization system:

(Apparently this still isn't everything.)

I would recommend organizing them by set, then by color. I wouldn't worry too much about rarity. After color, my trade binder's organized by major card type.

once I was playing against that Ajani deck with the Eldrazi deck and the Ajani got to over 600 life with that 'double your life every time you hit somebody' enchantment

I won a draft match by sending a Spawn of Thraxes to the underworld to rescue a Fanatic of Mogis. Domed my opponent for 8.

But this means that you don't have to feel guilty about not supporting your local game shop when you get things cheaper online and organize things with your friends.
