Staying real close is your best option but not with Havel's. It's got poise up the booty but if you're stompin' forward slowly then their attacks are still gonna do a bunch of damage. You get the timing right however and you can midroll through a lot of their attacks. What you want is to be able to get close quickly when they show up and back the fuck up quickly when they start their magic shit. If you have the Grass Crest Shield, that has decent enough magic protection with the stamina boost. Get that, equip Havel's Ring, get the best poise you can get with a midroll. I have noticed that Elite Knight chest, with Havel's arms and legs, and the gold-trimmed hood actually provide a nice bit of poise and magic resistance, while still being pretty nicely within midroll.
However, I usually have high END builds, so generally I'm looking at heavier weight anyways. If you've got lower END, go fast roll with highest possible magic resistance, and instead of Havel's equip the Wolf ring. Do a bunch of practice runs to get the timing on their swings down. It'll take a while, but you can usually chip them down over time. The only problem with that is chances are you'll be facing a fight with more than one, but generally if you're pressed up against one of them the others will hang back.
