I beat the Capra Demon, and then proceeded to kill Solaire and Siegfried for the 1k souls each/gear.

Bought a new PS3. I had never beat Demon's Souls, so I'm trying it out again.

you get 1k souls from the fucking bridge dragon, and you can get solaire's gear in the natural progression of the game

Is the point that Solaire is lame and weak?

The point is that he's an anime superhero and therefore he actually is such a cool guy simply by the virtue of his own skill. His armor is nothing special.
His talisman does have an A-level faith scaling factor, though.

But if you don't up your DEX you can't have any Great Scythe pudding. Or something.

Are Faith builds even viable?

the sunbro lightning is pretty awesome, especially once you hit the first ng+ to trade gwyns soul in for the super awesome lightning

My definition of viable does not include having to get through the entire game first before achieving the highlight of the build.

Sunlight Sword is pretty good, and extra heal casts can never be called non-viable.
There's also Great Magic Barrier, Vow of Silence, and Darkmoon Blade.

Faith is really good for an Anti-Magic build, or doing any sort of co-op.

Faith is really good.
Faith can also be really good and really dickish (any build based around Tranquil Walk of Peace)

You're taking the most advantage of Faith by doing co-op however. There's a lot of healing miracles, and two specifically designed to heal everyone in an area.
