I want to start reading or watching Gintama but I know that if I do both I won't have any time left for anything, so should I read the manga or watch the anime?

In my opinion you should watch the anime. Its basically just like the manga only with music and voices, and since the music is pretty good and they use some great voice actors its a straight improvement. There is occasional filler, but its not your normal filler arcs you find in most billion episode shounen, in the sense that instead of introducing shitty anime-only villains to fight for 20 episodes they sorta just screw around for 5-6 episodes that are mostly just comedy side-stories about different characters. But whether you go with the manga or the anime you should definitely still do it since Gintama is great.

So, as I understand it:

Lucky Star is a moe slice of life sort of thing whose "story" mainly involves easily distracted high schoolers.

Yuyushiki is Lucky Star with no point.

Nichijou is Yuyushiki with a generous dose of "WTF".

Lucky Star didn't have as many memorable funny moments as Azumanga or Nichi
Also people don't use reaction images from Lucky Star enough so any that were there we've forgotten about

I think that they should have done a double-length season, 13 episodes aren't enough since each chapter has an episode for investigation+plot advancemente+character development/interaction and another one for the trial.
26 episodes on the other hand are pretty much perfect, you can spend two episodes showing the characters interacting and exploring the school, an entire episode on the investigations (which get pretty in-depth during the later chapters) and a fourth one on the trial itself.
