well it's not like they went and skipped three in a row at the height of popularity. They (correctly) assessed which of the II-VI releases were most likely to do well enough with western audiences to make it worth the translation, and then renumbered IV and VI so as not to confuse the audiences that weren't getting the actual II, III, and V. But by the time they released VII, pretty much everyone knew what the actual numbers were, and rereleases and translations correctly numbered I, II, IV, and VI. I can't say for sure about III and V, because I don't know when the first English release of III was, and I'm like 94.542% sure that the whole reason they didn't bother with V was because it kind of flopped.

I believe the DS remake of III is the first time it was 'officially' available overseas. Also it's really a shame if V flopped originally since it's the best SNES Final Fantasy and might be my favorite period.

Speaking of I hope SE gives us more promises to be broken about FFXV at E3. It will be a real let down when that game comes out and is actually nothing they said it was going to be but until then it'll be a fun ride on the hype train.

I don't really bother keeping up with hype trains since I usually get games a few years late anyway, but just about all I know about FFXV besides a very basic premise is that it's supposed to be really pretty, and that Noctis is all zippy in the trailers.
What promises might they have given?

Well, It looks like Kingdom Hearts but you can teleport. Also multiple weapons and characters that I think you can switch on the fly I think?

Honestly nothing can top FF13 going from something closer to what Lighting Returns is but without the battle screen like 12 and without jobs and a weird combo system with time and gravity powers to FFV for babies with a terrible bastardization of the Sphere Grid tacked on.
