I find that everything that comes from Okami sounds absolutely fantastic.

I still propose that Super Castlevania 4 was the best Castlevania game, in pretty much every regard!

Probably some of my favorite boss music ever
http://www.youtube.com/watch?v=fMSKYa71pMk

probably the most mellow music I've probably ever heard in a game
http://www.youtube.com/watch?v=J67nkzoJ_2M

The fact this was the best game ever had some to do with it, but I used to beat this game over and over just to hear the credits
http://www.youtube.com/watch?v=iH0vp0Nj6p8

First game I ever beat by myself(I was like..4? give or take)

I wouldn't exactly call Homestuck a game. At all, really.

Badass as the music may be.

Although if it was a game I would definitely link to this

If you only count the non-metroidvania ones, definitely.
Of all the games, Order of Ecclesia is definitely my favorite.
Well, except for its fight against Dracula. With Rapidus Fio, the Judgement Ring and the Death Ring, he basically can't hit you while you do over a thousand points of damage with every attack. That was kinda disappointing, compared to the rest of the game.

I haven't played Symphony of the Night and Rondo of Blood, as well as some others I'm probably forgetting.

Oh right, video game music. Uh.
I always thought Flowering Night sounded like something out of Castlevania.

I was about to say "Well, I personally thought Rondo of Blood was the best, or at least the PSP remake" but then I noticed you said you haven't played that one.

If you have a PSP, definitely get Dracula X Chronicles. It has Rondo of Blood and Symphony of the Night (Even if unlocking Symphny of the Night is nearly impossible without a guide due to how completely stupid and random the thing you have to do is). If you don't have a PSP, you are out of luck, because I'm pretty sure the PSP is the only system that has an official english translation of RoB.

Edit: The PSP remake of Rondo of Blood also has some really neat remixes, too. Like this and this. Okay yeah I admit the main reason I made this update was because I realized that this post was completely off-topic.

I don't have a PSP, but now I wish I did.
My cousin has one, but I don't think it'd be his taste in games. He basically only plays Lego Star Wars and flight simulators.

Also, Deus Ex has some great ambient music.
