I can't say for sure but I think when you max out a Pokemon's EVs you can get bonuses like evolution stones from doing special/secret super training games. I maxed out my Seviper's EVs and the game threw a load of hidden super training games at me.

The second event offers a Leaf Stone but Idk the likelihood of you getting a Dawn Stone this way.

No, just the Super Training thing (one more pass over from the PSS/Pokemon Amie) - I think you just have to max out a Pokemon's EVs to unlock the hidden training events - that's all I had to do but I had already cleared/gotten a medal on a lot of the stage 2 training events.

Again: I can't promise you'll get a Dawn stone this way - it may be you can only get the basic stones (Leaf/Fire/Water/Thunder) this way - though I can see that there's (currently) a total of six hidden events I need to clear.

You can get dawn stones from the Super Training, I think it was the gallade balloon.
Only one pokemon needs to use mon amie, eevee to get sylveon. You don't get items from it (except furniture to decorate your amie page.)
