Note that that only applies when at level 100 (winning loads of battles at, say, level90 will still give you the same amount of EVs as winning the same amount of battles a level10), and only applies to the third and fourth generation games (the first two generations could still get EVs, but they'd only be calculated when you store the pokemon in the PC. This feature was removed for when pokemon are level100 in the later games).

Now that I know what EVs are, I have no idea what to do with my Pokemon.

you could just do what I do, and forget they exist. or not bother with them.

I've never bothered with how good a certain stat for any pokemon is. or how good any pokemon is in general. I just play them like a ten year old and use my favorites. like mawile and aipom (who suck terribly at being useful.)

I dont go there very often. I guess just... teach them good moves? pick really strong pokemon? I dunno. maybe hope for a bunch of luck.

daisies... EV's do matter.

I had a Sceptile that annihilated everything. I didn't know what EVs were at that time.
Too bad my save file got corrupted. Rainforest was the fastest daisies thing ever.

EVs matter a bit. But the movesets matter a whole lot more! Having either a badly-formed or greedy (taking only simple attack moves, especially when one of them is downright inferior to another) moveset.

At least in this generation you're told if moves are Physical or Special Attacks.

The Pokemon I raise normally learn the 'wrong kind of moves' - i.e. they learn powerful Physical Attack moves, but they have superior Special Attack stats.

This can be expensive to correct (TMs/Heart Scales).

I want more frog pokemons... Politoad is strange. The whole generation of pokemons is strange.

All the Polis are some sort of frog though.
Although, I guess frogs and toads are different in some way.
