IIRC, the cheddar you get as mayor is determined by amount of time that passes, general happiness of villagers (like running errands or improving the town in a way they suggest) and the general wealth value of the town (you have the option of making the town more wealthy, but that will in turn make things more expensive to buy in the town). That cheddar isn't actually yours to spend, but rather the town fund to improve it (think tax cheddar compared to your actual income).
There's also lots of ways to get cheddar, including the new fruit system. There are 11 types of fruit (the 5 original town fruit, coconuts, and the 5 tropical fruit you can get from islands), and each fruit tree is capable of making a "delicious" fruit that looks different than the regular ones. Delicious fruits sell very highly (like $1,000 bells) and can grow delicious fruit trees if you plant them. However, they're very prone to being killed while growing, and every time you shake them, they have a chance of dying. However, if they grow and fruit, you get 3 delicious fruits from each tree (though I think Coconut trees still only give two. Not sure if bananas are the same).
Also, there's the recycle shop that buys thing for more than the Nook Store, and there's something where if you sell them enough stuff they re-purpose it into a piece of furniture that they give you for free or something?
Some of this information might be wrong, but it's what I've heard from people who've played it.
Yep, Coconuts and Bananas are still 2 fruit trees.
I've only seen 2 'delicious' fruits, both of which I stupidly sold.
The villagers will help you pay off certain projects you start up around town, but if you want the projects to get done in a timely manner, it's on you to get it done.
I've never really noticed any payment to me as Mayor, but I do occasionally get these secret letters from だれもない which roughly means "no-one" that have these cool gifts.

jak33atworld, would you say it's easier to get cheddar in this one? To like pay off things (if any, since you're mayor) or buy furniture since you get a lot of bells from Mayor's Island.
As far as cheddar goes, if you plan your tree farms right, dig fossils up, crack open the gem rock of the day and cheddar rock of the day, you can average a nice amount of bells per day without having to work for it. Going to the tropical island is only 1,000 bells through kapt'n, but I've come back with totals around 190,000-250,000 bells without putting that much effort into it. I usually go to the island in the early evening, there seems to be a good mix of bugs and God-tier marine life that sell at phenomenal prices.
The recycle shop is kinda interesting. For the longest time, the blue dude in the re-purposing corner was asleep and wouldn't wake up. However, since I actually started using the daisies shop, and since I've sold quite a few things there, he woke up. It's kinda cool, they can modify stuff you bring in.
I'm currently working on paying off my second story and erecting pigeon dude's cafe as we speak.
(Also, I have a silver pole and silver shovel now...but I bought them from the museum curator's daughter on the second floor of the Museum, but I could have sworn I saw the Kanji for 'Rental' only.)
