Brawl doesn't really count as a fighting game in my mind. I have no idea what it's genre is.

If you have a 360 or PS3, I'd recommend either Fallout 3 or The Orange Box.
I don't have a Wii, but for the DS I'd recommend Chrono Trigger, the Ace Attorney series, Hotel Dusk, Ninja Gaiden: Dragon Sword, and FF 3 and 4.

If you have a PS1, and enought scratch to get it. Xenogears. 'Nuff said.
