I'm personally more of a cat person myself.. never could get around to liking dogs much, much less the OVERLY EXCITABLE PUPPIES GAH.

A good italian cook would either let the food (sauces especially) cook low and slow to get better flavor, or would season it properly so the flavor was the same whether it was leftovers or fresh.

Most people aren't, so twice baking it results in a better taste.
