Frankly I've never heard it called... anything. Except, like, "that big inflatable thing the kids are jumping around in."

It's called a bouncy castle in the simulator game Theme Park, and that's the only time I've ever heard a name for it.

I've always heard it referred to as a "bouncy castle", because, where I'm from, it's very common to see them made up as castles. Like, I've never seen one that wasn't a castle.
