Do any of our pro artists have any advice I could use for doing landscapes?

That's...a really vague question.

1. use reference, even if the landscape is made up.
2. get to know different kinds of perspective ie 1-point 2-point etc
3. consider your fore/middle/background. Staging is important.

Ha, probably cause I only have a vague idea of how to do landscapes. I'm mostly having a hard time figuring out how to shade it and give it texture.

Texture depends on what you're drawing. ie trees, stone, water
Shading is a matter of light source, depth and framing.

I need to figure out how to do leaves. I'm just using photoshop 10 and for most of the textures I've just used differently shaped brushes. But I'm not sure what to use for leaves. Should I do a more speckly brush or something more rounded?

I guess I could post a progress image if it would help you give me advice.

I don't think that the brush should really have a huge impact on drawing the leaves of a tree. Really, so long as you can convey the idea that they are leaves, you can get away with just having big swatches of colour with a few detailed bits to give it form.
But yeah, reference is always helpful when you want to draw something.

I have a portfolio deadline coming up in just over a week, so I've been rounding up some things to include.
Turned this into this today, since I always kind of liked it.

So I got an Intuos drawing tablet for Christmas last year, but only just got around to using it while I was on holiday. Presenting:

Face of man that somewhat resembles Bruce Wayne as seen in The Batman

A ray from the shark tank at Sea World

As you can see, I haven't exactly mastered digital colouring yet but I think the linework for not-the-batman is pretty solid at least. Although his eyes are a little mismatched.
